Parmesan Potato Puffs

2 medium baking potatoes; peeled and
1/4 cup parmesan cheese; freshly gra
2 tablespoon skim milk
1/8 teaspoon salt
1/8 teaspoon ground white pepper
1/8 teaspoon nutmeg
1/4 cup frozen egg substitute; thawe
1 vegetable cooking spray

Recipe by: Dora Guerra Cook potato in boiling water until tender, drain, and mash. Add 1/4 c. parmesan cheese and next 4 ingredients; beat at med. speed of mixer just until mixture is smooth. Stir in egg substitute. Pipe or spoon potato mixture into 6 mounds on a baking sheet coated with veg. spray; sprinkle evenly with 1 tbsp. parmesan. Bake potato mounds at 350 degrees for 25 - 30 min. or until lightly browned
