Red Cabbage With Beer

1 medium red cabbage; shredded
1/2 red wine vinegar
2 granny smith apples; peel/co
1/2 cup sugar
3/4 cup water
1 medium onion; diced
1/4 cup butter
1/2 beer
1 small bay leaf
1 pinch of cinnamon
1 pinch of ground cloves
1 pinch of allspice
1 salt and pepper; to taste
Recipe by: dz234@cleveland.freenet.edu (Helen B. Greenleaf) Place all ingredients in a covered pot (I always use one of my Le Cruesets) and bring to a boil. Reduce heat and cook slowly for about an hour. Taste and adjust seasonings. If there's too much liquid, uncover and cook until most of the liquid is evaporated.
