Beet Soup


soups

1 each bunch of beets,
1 single peeled, halved, sliced
1 each beet greens,
1 single washed and finely chopped
3 each stalks celery, diced
1 tablespoon lemon juice
1 single salt & pepper to taste
1 each lg onion, diced
4 each carrots, sliced
1 tablespoon vinegar
1 tablespoon horseradish
1 can tomato soup

Put vegetables in a large pot with water to cover. Add remaining ingredients and mix thoroughly. Simmer 2 - 2 1/2 hours, until beets and carrots are tender. Source: my Lithuanian mother-in-law
