Baked Peach Crunch

8 ounces peach slices in juice; drained
2 tablespoons raisins
2 teaspoons honey
1/4 teaspoon ground ginger
1/4 cup 40% Bran Flakes¨; or other flake cerea
; crushed
3 tablespoons coconut shreds
1/4 teaspoon ground cinnamon
1 teaspoon margarine; melted
Preheat oven to 350 degrees; coat a 1-quart casserole with nonstick cooking spray. Combine peach slices, raisins, honey and ginger in casserole; toss to coat. Combine crushed cereal, coconut and cinnamon; sprinkle over peach mixture. Drizzle margarine over cereal mixture. Bake for 15 minutes, or until thoroughly heated.
