Mission French Toast

----Presentation----
2 loaves bread; cut 1/2 inch slices
1 cup fresh blueberries
4 cups fresh strawberries; (large basket)
sliced fruit; 3/4 cup for garnish
real maple syrup; optional
powdered sugar
----French Toast Batter----
3/4 cup egg whites
3 cups milk, skim
1/4 cup brown sugar
1/8 cup cinnamon
----Blackberry/Blueberry Puree----
1 cup frozen blackberries
2 cups frozen blueberries
1 cup sugar
----French Toast Batter---- Whisk mixture until blended. ----Blackberry/Blueberry Puree---- Cook in small stock pot until fruit is cooked down. Drain some of the excess liquid from fruit if a thicker puree is desired. When mixture is cooled down, puree in food processor until smooth. Optional - Remaining mixture can be strained through a cheesecloth if desired to remove any remaining particles from berries. Place puree in squirt bottle. ----Presentation & Assembly---- 1. Soak bread in French Toast Batter. 2. Heat skillet or flat top and use non-stick non-fat spray. Place bread slices in skillet; cook on both sides until crispy on the outside. 3. Garnish plate with puree. 4. Lay French toast pieces on platter. Arrange fruit around French toast. Lay blueberries and strawberries on toast. Dust with powdered sugar. Serve immediately.
